How Vulcan designs its cooktops
Vulcan griddles and hot tops are built to hold high heat for hours, and most problems involve the burners, pilots or thermostats. A griddle with hot and cold spots may have carbon-clogged burners, an uneven gas supply or a thermostat that isn't controlling properly. Pilots can go out because of drafts or clogs. On thermostatically controlled griddles, a drifting thermostat causes the plate to run hotter or cooler than the setting. Hot tops need all burners working to heat evenly. We check each burner and pilot, then test and calibrate the thermostat.
Common failure points on Vulcan cooktops
- Cold spots across the griddle plate
- Griddle pilot blown out by a draft
- Thermostat not controlling heat
- Burner ports choked with carbon
- Thermocouple not holding the valve

Still have a question?
Get in touch with the brand, the symptom and, if you can find it, the model number. Some things we can answer right away; others need a technician in front of the machine.
Often a burner on that side is clogged or its pilot is out. It could also be that section's thermostat. We check each burner and pilot, then the thermostat.
Heavy-use griddles benefit from regular cleaning and periodic checks of burners, pilots and thermostats. We can recommend a routine based on how hard it's used.
