Vulcan Repair for Owners, Renters and Landlords

Vulcan equipment is built to run through long services, and when it stops, the cause is usually a wear part rather than a design flaw: a pilot that won't stay lit, a thermocouple that has weakened, a thermostat that drifts or a blower motor that gives out. Our work on Vulcan is independent; we aren't one of the factory's authorized agents, so anything inside its warranty period belongs with Vulcan or the dealer who installed it. Past that, a technician visits the kitchen, traces the problem to a part and prices the fix for your approval before a single fitting is loosened.

A stove maker that became a restaurant brand

The company dates its history to 1865 and a stove foundry that became Hart Manufacturing; the Vulcan name arrived in 1890 with the Vulcan Gas Heating Company. The two merged in 1949 as Vulcan-Hart and is now part of ITW Food Equipment Group, the Illinois Tool Works division that also owns Hobart. The brand is based in Baltimore County, Maryland.

The catalog covers restaurant ranges, heavy-duty ranges, convection ovens, griddles, charbroilers, fryers, steamers, kettles and braising pans.

Kitchens that run Vulcan lines

Vulcan equipment turns up in the kitchens of independent restaurants in strip centers and on busy corridors, in hotel and conference-center kitchens, in office and school cafeterias, and in church and community halls that cook for events. Some of those ranges have been in the same spot for many years and have been moved or reconnected more than once.

A range that has been moved should have its gas connector, restraint cable and leveling checked. We note those items during the visit.

Standing pilots and snap-action thermostats

On a typical Vulcan restaurant range, small flames burn all day between each pair of open burners, ready to light them. The oven is protected differently: its pilot heats a thermocouple, and if that flame dies, the safety valve cuts gas to the oven burner. A pinhole orifice fouled with carbon, a draft pulled across the pilot by the hood or a back door, and a thermocouple that no longer generates enough voltage cause most outages.

Oven and griddle thermostats are mechanical on many models and drift with use. The VC convection ovens bring more electrical parts to the job: a blower, interlock switches on the doors, and either electronic ignition or a pilot. If an interlock switch misreads the door as open, the blower never starts, and the oven sits cold with perfectly good burners.

Keeping the line running

When you book, give us your hours and when the kitchen is busiest, and we'll try to arrive outside the rush. When a part has to be ordered, we say whether the rest of the range can safely keep cooking until it arrives. Grease and carbon cause many failures, so after a repair we point out any cleaning that would help prevent the next one.

Vulcan components are stocked by commercial foodservice parts houses and through ITW's own parts operation, and the common ones (thermocouples, pilot burners, thermostats, safety valves, blower motors) are easy to source. Older ranges sometimes need a superseded part that fits a little differently. We read the data plate, order to it, and give you a realistic arrival estimate.

A clogged pilot orifice, a draft from the hood or a nearby door, or a weak thermocouple are the usual causes. We clean the pilot, check the flame and test the thermocouple. If it keeps going out, the safety valve may need attention.

Sometimes. Some repairs can be done on one section while the rest keeps running, but gas work usually requires shutting off the affected part. We tell you what's safe before starting.

It can be either. Carbon-clogged burners heat unevenly, and a drifting thermostat can overshoot or undershoot. We check the burners and pilots first, then calibrate or replace the thermostat.
