How Vulcan designs its ovens
Vulcan ovens come in two main types: standard ovens under ranges, and VC-series convection ovens. The oven under a range relies on a pilot flame heating a thermocouple; lose the flame or let the thermocouple weaken and the safety valve stays shut, leaving the oven cold. Mechanical thermostats can drift out of calibration. The VC convection models need their blower running before the burner is allowed to fire, and the blower depends on the door interlock, so a single failed switch shuts the whole oven down. Door hinges and seals wear with heavy use. We check the pilot, thermocouple and thermostat, then the blower and door switches.

It might be, but check the door switch first. Many convection ovens won't run the fan if the switch doesn't detect the door as closed. We test the switch, motor and wiring.
Mechanical thermostats can often be recalibrated. If it's worn or doesn't hold calibration, we replace it. We verify it against a calibrated thermometer, not the dial.
