How Wolf designs its ovens
Wolf's M Series wall ovens heat with a concealed element under the floor, a broil element above and two rear-corner convection fans with their own vertical elements, all run by a touchscreen control reading a probe in the cavity. When baking comes out uneven, a failed convection element or fan is the likely cause, since the concealed bake element alone can't spread heat across racks. Older E Series ovens have a different fan layout, so we identify the series before ordering. Convection steam ovens add a reservoir, a pump and a steam generator that scale up if descaling is skipped. Speed ovens bring microwave parts into the diagnosis. We test each heating load with a meter and check the cavity with our own thermometer.

Usually one of the rear convection fans or the element that surrounds it. The oven still heats because the bake and broil elements work, but the airflow is uneven. We test each fan and element separately.
The tank sensor may be dirty or failing, or the tank isn't seated in its dock. Mineral buildup can also affect the reading. We check the seating and clean the contacts before testing the sensor.
