How La Cornue designs its ovens
La Cornue ovens come in two very different kinds. The Château's vaulted oven, in gas or electric, heats a curved cavity designed to move air without a fan, and a gas version lights its burner through a thermocouple safety circuit just like the cooktop. If the oven lights and then goes out after a minute, that thermocouple, or its position in the flame, is the first suspect. If it stays lit but bakes too hot or too cool, the thermostat has drifted. CornuFé ovens are electric convection ovens, so their faults are elements, fans, thermostats and relays. On both, door gaskets and side-swing or drop-down hinges wear, and a door that won't seal wastes heat and scorches the trim above it.
