Three sizes of machine, three sets of habits

The LXe undercounter is the small one, tucked under a bar or prep counter and loaded like a household dishwasher but on a timed commercial cycle. The AM-series door-type sits in a corner of the dish room with a hood that lifts over a single rack. CL conveyors pull racks through a tunnel on a drive, and the largest kitchens use flight-type machines with a continuous belt.

Each size wears in its own spots. Undercounters live and die by their pump and rinse system. Door-types work their hood switches and hinges hard, dozens of times an hour. Conveyors add a drive motor, curtains and more tanks to keep hot.

Rinse heat, chemicals and mineral scale

A high-temp Hobart kills bacteria with a final rinse from a booster heater. A low-temp model does it with sanitizer injected into the rinse. So when a machine fails its check, the questions differ: is the booster actually getting the water hot enough, or is the sanitizer pump pulling from an empty jug?

Hard water leaves scale on booster elements, tank heaters and rinse nozzles. Scale insulates an element until it overheats and burns out, and it narrows nozzles until the rinse pattern breaks up. A kitchen that delimes on the schedule in its manual sees far fewer of these calls.

Scheduling around the dinner rush

A machine that can't reach its sanitizing temperature or chemical level shouldn't be used for service ware. Fall back on your manual washing setup until it is fixed, as your health permit requires.

Pull and rinse the scrap screens and strainers, make sure the wash and rinse arms spin freely and their end caps are on, confirm the door or hood is closing fully, and look at the chemical containers. Note what the display or temperature gauges read. Those few minutes sometimes solve the problem outright, and when they don't, they shorten the diagnosis.
