How La Cornue designs its cooktops
La Cornue cooktops mix burner types that don't behave alike. Standard gas burners rely on thermocouple flame safety; a flame that catches and then vanishes once the knob is let go means the thermocouple isn't getting hot enough. Igniters crack or collect grease and stop sparking. Food and cleaning residue block ports and make the flame uneven. The French top on many Château ranges is a heavy cast-iron plate heated by a burner underneath, hottest in the center and cooler toward the edges; it's slow to come up to heat by design, but a burner that's clogged or burning weakly makes it worse. Induction zones on some models have their own boards and cooling fans. Valves can stiffen with age.

Longer than a regular burner, since it's a heavy iron plate. If it's slower than it used to be, or the flame underneath looks small or yellow, the burner needs cleaning or adjustment.
