In a busy kitchen the most common complaint is a box that drifts warm during the lunch or dinner rush, and the most common cause is a condenser coated with grease and flour dust, which leaves the compressor running flat out with nothing in reserve. Evaporator fans quit, gaskets split at the corners where they fold, and self-closing hinges weaken so doors hang open. Condensate that isn't evaporated or drained can pool on the floor. A failed probe can make the controller misread the box. We clean and check airflow before anything else.
