How Everest designs its refrigerators
An Everest cooler that starts running warm usually has a heat problem at one end or an air problem at the other. At the condensing unit, a coil matted with flour, lint and grease vapor can't reject heat, so pressures rise and the compressor labors without catching up; bottom-mount units on prep tables and chef bases collect that film fastest. Inside the cabinet, the evaporator fan has to move air across the coil and through the rail or drawers. If the fan quits, the coil frosts solid and the shelves warm in a few hours. Worn drawer gaskets on chef bases, a misreading probe and a clogged condensate line round out the usual list. We work from the condenser inward so the cheapest cause is ruled out first.

The rail gets cold air from the same evaporator but has the hardest job, since the pans are open to the room every time the lid lifts. Overfilled pans and a table beside the fryer make it worse. When good habits don't fix it, we check the rail's airflow path, the fan and the controller setpoint.
