How Hoshizaki designs its freezers
Steelheart freezers layer extra heaters onto the basic refrigeration circuit: a defrost heater on the evaporator, a heater along the drain line and heaters in the door frame. Each has its own way of failing. If defrost stops working, ice spreads across the coil, airflow chokes off and the cabinet warms. If the drain heater fails, meltwater freezes in the line and backs up into the box, where it forms a sheet of ice on the floor. If a door frame heater goes, the gasket freezes to the cabinet and doors stick or rim with frost. Evaporator fans and controllers fail too, and a greasy condenser in a hot kitchen makes all of it worse. We test the three heater circuits along with airflow and controls.
